Wild old-oak fermentation and maturation, three years' tirage and a low dosage (4g/L), with 7% Ballarat pinot added to the cuvée. A stylish sparkling rosé with layers of savoury complexity and faint berry granita tones. The wine has impressive depth and integration, with glorious flavour expansion on the close. There is nothing sweet or simple about this rosé.
